  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

  • 1/3 cup mayonnaise
  • 1 clove garlic, finely grated
  • 1/2 teaspoon fresh lemon juice
  • 1/8 teaspoon kosher salt

  • 4 hoagie rolls
  • 2 tablespoons unsalted butter
  • 8 slices provolone cheese

    Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer, working in batches if needed, and cook for 5 to 7 minutes, stirring occasionally, until golden on the edges and cooked through to 165°F. Transfer the chicken to a plate and set aside.

    In the same skillet, melt the butter over medium heat, scraping up any browned bits left behind. Add the onion, peppers, and mushrooms, then sprinkle in the sugar, salt, and pepper. The vegetables may release some liquid at first; this is normal and will cook off as they soften.

Note

Slice the chicken thighs evenly so they cook at the same rate and sear properly.

For meal prep, store the cooked filling separately from the garlic mayo and the toasted rolls. Refrigerate the filling in an airtight container for up to 4 days and the garlic mayo for up to 5 days.

Reheat the filling in a skillet over medium heat until steaming hot throughout, or in the microwave in 30-second bursts, stirring in between.

Toast the rolls and add fresh cheese just before serving so the bread stays crisp rather than softening in the refrigerator.

If the vegetables look watery after cooking, continue cooking uncovered for a few extra minutes to let the liquid evaporate before adding the chicken back in.
