Ingredients
  • 1 tablespoon olive oil
  • 1 small knob of dairy free butter or additional oil
  • 2 medium onions, chopped
  • 2 garlic cloves, finely minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons mild curry powder
  • 500 g parsnips, peeled and chopped (about 4 cups)
  • 1 tart cooking apple, peeled and diced
  • 700 ml vegetable stock, or enough to comfortably cover the vegetables
  • Salt and pepper to taste
  • Coconut milk or dairy free cream, optional for serving
