Ingredients
    For the Base
  • 1/4 cup + 2 tbsp unsalted butter, softened
  • 1/4 cup + 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • For the Peach Filling
  • 4 cups peaches, peeled and chopped
  • 1/3 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp lemon juice
  • For the Crumble Topping
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 tbsp brown sugar
  • 1/2 cup + 2 tbsp all purpose flour
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • For the Glaze (Optional)
  • 1/4 cup powdered sugar
  • 1 1/2 tsp water
Instructions
    Prepare the Pan and Oven
  1. 1
Preheat your oven to 375°F. Line an 8x8-inch baking pan with parchment paper, allowing some overhang on the sides to help lift the bars out later. Set the pan aside while you prepare the layers.
  2. Make the Base
  3. 2
In a medium mixing bowl, combine the softened butter, granulated sugar, brown sugar, and vanilla extract. Use a hand mixer or spoon to mix until the texture is smooth and slightly fluffy. Add the flour, cinnamon, and salt, then mix until a soft, slightly crumbly dough forms. Press the dough evenly into the bottom of the prepared pan, packing it firmly to create a solid base layer.
  4. Prepare the Peach Filling
  5. 3
In a large mixing bowl, add the chopped peaches, granulated sugar, cornstarch, cinnamon, vanilla extract, and lemon juice. Gently stir until the peaches are evenly coated and the mixture looks glossy. Let it sit for about 10 minutes so the juices begin to release and thicken slightly. Pour the filling evenly over the base.
  6. Make the Crumble Topping
  7. 4
In a separate bowl, mix the softened butter, granulated sugar, and brown sugar until combined. Add the flour, cinnamon, and salt, then use a fork or your fingers to bring the mixture together into soft, crumbly clumps. The texture should be slightly chunky, not too fine. Sprinkle the crumble evenly over the peach layer.
  8. Bake the Bars
  9. 5
Place the pan in the oven and bake for about 45 to 50 minutes, until the top is golden and the filling is bubbling gently around the edges. If the topping begins to brown too quickly, loosely cover the pan with foil and continue baking for an additional 15 to 20 minutes until fully set.
  10. Cool and Slice
  11. 6
Remove the pan from the oven and place it on a cooling rack. Allow the bars to cool completely in the pan for at least 2 to 3 hours. This step is important for the filling to set properly. Once cooled, lift the bars out using the parchment paper and slice into even squares.
  12. Prepare the Glaze (Optional)
  13. 7
In a small bowl, stir together the powdered sugar and water until smooth and pourable. Drizzle lightly over the cooled bars and allow it to set before serving.
Note

Store the bars in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.

If the filling seems too soft after baking, allow more cooling time as it will continue to firm up.

For reheating, warm individual bars in the microwave for 15 to 20 seconds until soft and slightly warm.

Use ripe but firm peaches to avoid excess moisture in the filling.
