Crock Pot Corned Beef Veg and Beer Recipe

Description

This slow cooker corned beef dinner is an easy, practical option for busy days when you want a full meal without much work. The vegetables soften beautifully, the brisket turns tender and the beer adds a gentle depth of flavor.

Ingredients
  • 10 Baby red potatoes, small ones, quartered
  • 1 medium onion, peeled and cut into chunky pieces
  • 2 cups Baby carrots, about 2 cups, left whole or halved
  • 4 cups water, roughly 950 ml
  • 4 lb Corned beef brisket, including the spice packet
  • 6 oz Beer (175 ml IPA works best, but use your favourite if you do not like IPA)
  • 1/2 Cabbage, half a head, coarsely chopped

    Place the potatoes, onion and baby carrots in the bottom of your slow cooker so they form a sturdy base.

    Pour in the water and set the brisket on top, fat side up if yours has one.

    Pour the beer over the brisket, then sprinkle the included spice packet across the top so the flavor settles in as it cooks.

    Cover the slow cooker and let it cook on high for about 8 hours until the brisket softens and the vegetables are tender.

    About an hour before serving, stir in the chopped cabbage, cover again and let it soften in the broth.

    When everything is cooked through, slice the brisket and serve it with the vegetables and a spoonful of the cooking liquid.
Note

This meal stores well in the fridge for several days, making it a great make ahead option.
If you prefer a thicker broth, reduce the water to about 3 cups.
Carrots, parsnips or extra potatoes can be added to stretch the meal for larger families.
