Description

These St Patrick’s Day Oreo truffles are an easy no-bake dessert made with crushed Oreos and cream cheese, then dipped in candy melts. Perfect for parties, holidays, or when you want something festive without turning on the oven.

Ingredients
  • 8 oz brick cream cheese, softened to room temperature (226 g)
  • 36 Oreo cookies , finely crushed, regular or mint (about 14 oz / 396 g)
  • 12 oz white candy melts, for coating (340 g / about 2 cups)
  • 12 oz green candy melts, for drizzle or coating (340 g / about 2 cups)
  • 1 to 2 tsp neutral oil or shortening , optional, helps thin melted candy (5–10 ml)
  • St Patrick’s Day sprinkles, optional
Instructions
  1. 1
Line a large baking sheet with parchment paper so the truffles don’t stick later.
  2. 2
Mix the crushed Oreos and softened cream cheese in a large bowl until it comes together into a thick, even mixture. It should look like soft cookie dough.
  3. 3
Scoop about 1 to 1½ tablespoons of the mixture and roll into balls. Place them on the prepared baking sheet.
  4. 4
Pop the tray into the freezer for about 20 to 30 minutes, just until the truffles feel firm.
  5. 5
While they chill, melt the white and green candy melts in separate bowls, using short microwave bursts and stirring often. Add a little oil if needed to smooth them out.
  6. 6
Dip each chilled truffle into the white candy coating, let the excess drip off, then place back on the parchment.
  7. 7
Drizzle with green candy melts, add sprinkles while still wet, then refrigerate until set.
Note

These truffles can be made a day ahead and stored in the fridge until ready to serve.

Mint Oreos work great for a more festive St Patrick’s Day flavor, use the same amount.

Truffles can be frozen for up to 2 months, thaw overnight in the fridge before serving.
