Prepare the Filling

  1. Add the peanut butter, softened cream cheese, brown sugar, vanilla extract, and sea salt to a large mixing bowl. Use a hand mixer or sturdy spoon to mix until smooth and creamy. Gradually stir in the powdered sugar until a soft, thick dough forms that can easily be rolled into balls.

Assemble the Pretzel Bites

  1. Line a sheet pan or large plate with parchment paper. Scoop about 1 tsp of the peanut butter mixture and roll it into a smooth ball using your hands. Place the filling between 2 mini pretzels and gently press together to create small sandwich bites. Repeat with the remaining filling and pretzels.

Chill the Pretzel Sandwiches

  1. Place the tray in the freezer for 20 to 25 minutes until the peanut butter filling feels firm to the touch. This helps the pretzel bites hold their shape and makes dipping much easier. The filling may still feel slightly soft in the center, this is normal.

Melt the Chocolate

  1. Add the dark chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15 second intervals, stirring well after each interval, until the chocolate is completely melted and glossy. This usually takes about 2 to 3 minutes total.

Dip the Pretzel Bites

  1. Dip each pretzel sandwich halfway into the melted chocolate using a fork or spoon. Let the excess chocolate drip back into the bowl before placing the bites onto the parchment-lined tray. Sprinkle the tops with flaky sea salt while the chocolate is still wet.

Chill Until Set

  1. Return the tray to the freezer for about 10 minutes, or until the chocolate is firm and set. The chocolate should look smooth and slightly glossy once chilled.
