Instructions
Prepare the Baking Sheet
-
Line a large baking sheet or plate with parchment paper and clear space in the refrigerator for chilling. This will keep the peanut butter balls from sticking and make cleanup much easier later.
Mix the Peanut Butter Filling
-
In a large mixing bowl, combine the melted butter, peanut butter, powdered sugar, vanilla extract, and sea salt. Stir with a spatula or handheld mixer until the mixture looks smooth, thick, and creamy.
-
Add the Rice Krispies cereal and gently fold until evenly combined. The mixture should hold together easily while still looking light and crispy.
Shape the Rice Krispie Balls
-
Use a small cookie scoop or spoon to portion the mixture into evenly sized balls. Roll each portion gently between your hands until smooth and round.
-
Place the balls onto the prepared baking sheet, leaving a little space between each one. Transfer the tray to the refrigerator and chill for about 2 hours, or until the balls feel firm and cold to the touch.
Melt the White Chocolate
-
Add the white chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20 second intervals, stirring well after each interval, until the chocolate is fully melted and glossy.
-
Do not overheat the chocolate. White chocolate melts quickly and can become thick or grainy if overheated. The melted mixture should look smooth and pourable.
Dip the Peanut Butter Balls
-
Using a fork or dipping tool, lower each chilled peanut butter ball into the melted white chocolate. Turn gently to coat completely, then lift and allow the excess chocolate to drip back into the bowl.
-
Place the coated balls back onto the parchment-lined tray while the chocolate is still wet.
Decorate the Treats
-
Immediately sprinkle the tops with patriotic sprinkles so they stick to the chocolate coating before it sets.
-
If using candy melts, melt the red and blue candy melts separately in small microwave-safe bowls. Drizzle lightly over the coated balls using a spoon or piping bag for a festive finish.
Chill Until Set
-
Return the decorated peanut butter Rice Krispie balls to the refrigerator for about 30 minutes, or until the chocolate coating feels firm and fully set.
-
Once chilled, the coating should look smooth and slightly glossy with a crisp outer shell.
Note
Store the Rice Krispie balls in an airtight container in the refrigerator for up to 5 days.
For a softer texture, let the treats sit at room temperature for about 10 minutes before serving.
If the white chocolate feels too thick while dipping, stir in an additional 1 tsp coconut oil until smooth.
Be sure to chill the peanut butter balls thoroughly before dipping so they stay firm and hold their shape easily.
