This canned corned beef and cabbage recipe is a simple, practical dinner for nights when you want something hearty without a lot of prep. The cabbage softens into a tender, flavorful base, and the canned corned beef makes the whole meal quick and dependable.

  1. Warm a large pot over medium heat and cook the bacon until it releases its fat and turns lightly golden.
  2. Stir in the sliced onion and let it soften for a couple of minutes, mixing it around so it cooks evenly.
  3. Add the butter and let it melt, then add the cabbage and season with salt, pepper and a small pinch of Cajun seasoning if you like.
  4. Pour in a little chicken broth to create moisture at the bottom of the pot, then mix everything up so the cabbage is well coated.
  5. Cover the pot and let the cabbage cook gently for about 20 to 30 minutes, stirring now and then and adding a splash more broth only if needed.
  6. Once the cabbage is tender, stir in the canned corned beef, breaking it into small pieces so it blends in smoothly.
  7. Let everything warm through for a few minutes, then add a pinch of red pepper flakes if you want a little heat.

Note

This dish keeps well in the fridge for about three days and reheats easily on the stovetop.
For a lighter version, use half the bacon and replace some of the butter with a splash of broth.
Leftovers can be tucked into wraps or served over boiled potatoes for another easy meal.
