Instructions
Prepare the Grill

Preheat a barbecue or grill to medium heat, about 180°C to 200°C. Clean the grates and lightly oil them to prevent sticking. The grill should be hot enough to create light grill marks without burning the fruit too quickly.
Mix the Honey Glaze

In a small mixing bowl, combine the honey, maple syrup, cinnamon, and lemon juice. Stir until smooth and slightly glossy. The mixture should be pourable and evenly blended.
Prepare the Peaches

Brush the cut sides of the peaches with olive oil using a pastry brush. Sprinkle lightly with sea salt. This helps enhance the natural sweetness and prevents sticking during grilling.
Grill the Peaches

Place the peaches cut-side down directly onto the grill. Cook for about 3 to 4 minutes until grill marks appear and the surface looks golden. Flip carefully using tongs and cook for another 3 to 4 minutes until the peaches are tender but still hold their shape.
Add the Glaze

Brush the honey glaze over the peaches while they are still on the grill. Allow it to warm and lightly caramelize for 1 to 2 minutes. The surface should become slightly glossy and fragrant.
Make the Creamy Topping

In a mixing bowl, combine the mascarpone or Greek yogurt with honey and vanilla extract. Stir until smooth, thick, and creamy. The texture should be soft but hold its shape when spooned.
Prepare the Peach Schnapps Drizzle

In a small saucepan over low heat, combine the peach schnapps and honey. Warm gently for about 1 to 2 minutes until slightly thickened. Stir in the lemon juice and a pinch of salt. The mixture should be smooth and lightly glossy.
Assemble and Serve

Spread the creamy topping onto a serving plate or spoon it directly onto each peach half. Place the warm grilled peaches on top. Drizzle lightly with the peach schnapps mixture. Serve immediately while warm and fragrant.
Note
Store leftover peaches in an airtight container in the refrigerator for up to 2 days. Keep the creamy topping separate to maintain its texture.
Reheat peaches gently in a pan over low heat or in the microwave for a short time until just warmed through.
If the peaches are very ripe, reduce grilling time slightly to prevent them from becoming too soft.
If the glaze begins to darken too quickly on the grill, move the peaches to a cooler area to finish cooking gently.
